Our Garden: Flavor from the Ground Up
Our edible garden is at the heart of everything we do. We’re actively expanding it, adding new beds and plants like Bronze Fennel, Nopal cactus, prickly pear, and Agave Americana for our upcoming barbacoa pit (teaser alert!).
We also embrace fast-growing, abundant plants that are often overlooked—or even considered weeds—like Mallow, Beach Mustard, Chickweed, and Green Pine Cones. These plants thrive naturally, need minimal water or care, and are extremely resilient. Instead of being tossed away, we harvest them for flavor, nutrition, and sustainability. Using these abundant “weeds” reduces waste and adds unique, vibrant flavors to our dishes.

Corn Tortillas: A Labor of Love
Our handmade corn tortillas are another example of our commitment to local ingredients. To achieve authentic flavor and texture, we’re sourcing rare Australian heirloom corns. Many suppliers don’t import the dry kernels we need because we’d be their only customer, so we’re going directly to local growers. These tortillas reflect true Mexican tradition while supporting Australian agriculture.

Seafood and Whole-Animal Respect
Sustainability extends to our seafood. We avoid overfished species and focus on responsibly sourced fish. Inspired by Asian culinary techniques, we use fish heads, collars, and offal to create deep, flavorful stocks.
Similarly, we treat meats like pork jowl and lamb neck with respect, slow-cooking undervalued cuts to bring out maximum flavor. At Sonora, nothing goes to waste, and every part of the ingredient has a purpose.
