At Sonora, vegetables aren’t just sides — they’re the heart of our dishes. Our own garden beds in Western Sydney focus on self-seeding crops that keep giving season after season. These plants take care of themselves in many ways, letting us focus on creating dishes that celebrate their natural flavours. While we’re not certified organic, everything we grow is completely free of pesticides and chemicals, so every bite is pure and natural.

We also like to throw in ingredients you haven’t seen before or that are hard to find, like wild mushrooms, aloe vera, squash blossoms, tomato leaves, and Nopali. These rare additions help keep our menu exciting and unexpected, and give our diners a chance to taste things they might never find elsewhere.

Mexican Flavours with a Garden Twist

Vegetables take centre stage in many of our dishes. You’ll find flavours and textures that range from familiar to completely new:

  • Spinach, mint & almondra tacos
  • Grilled vegetables with smoked chilli oil
  • Salsas bursting with heirloom tomatoes, herbs, and edible flowers
  • Rare garden gems like squash blossoms or Nopali

We’re also experimenting with aging vegetables to deepen their natural flavours, similar to how cheese or meat is aged. This adds a richness and complexity that makes even simple vegetables taste extraordinary, and allows us to create dishes that are truly memorable.
