Not Just Another Mocktail

Most “virgin margaritas” are basically lime and sparkling water — fizzy, light, and honestly a bit of a letdown. They lack the depth, balance, and agave backbone that makes a true margarita.

At Sonora, we don’t do shortcuts. We’ve put as much effort into our Virgin Margaritas as we do our tequila cocktails. The secret is Sammy Picante’s Oaxaca non-alcoholic spirit, which brings smoky agave character to the glass, along with their Lemon Myrtle Salt to complete the rim. Together, they give our Virgin Margaritas structure, complexity, and the true flavour of Mexico.


Why Virgin Margaritas, Not Mocktails

We’ve tried mocktails. They don’t sell. Guests want something Mexican, refreshing, and celebratory — and that means margaritas. Our Virgin Margaritas aren’t an afterthought. They’re designed to feel like the real thing, and even tequila lovers happily drink them.


The Two on Our Menu Right Now

We currently pour two Virgin Margaritas at Sonora, each crafted with the same care as our signature cocktails:

  • Frozen Piña – tropical, playful, and blended smooth with pineapple and smoky Oaxaca.
  • Firecracker Jalapeño – bold, spicy, and smoky, with fresh lime and jalapeño heat.

Dry July & Dry January

We’ve seen just how important these drinks are during Dry July and Dry January. In January this year, when half of Sydney was off the alcohol, we sold an insane amount of Virgin Margaritas. People still wanted to go out, celebrate, and enjoy the flavours of Mexico — just without the tequila. That’s why Virgin Margaritas are now an essential part of our menu.


Why They Work

Other virgin margaritas leave you lacking, but ours deliver real flavour. Thanks to Sammy Picante’s Oaxaca and Lemon Myrtle Salt, they’ve got smoky depth, structure, and balance. They’re not a compromise — they’re a proper margarita experience, just without the alcohol.

Frozen Pina Base

Pineapple 125g

Agave Nectar (1:4) 28ml

Coconut water 25ml

lime juice 8ml

Orange Bitters 2 drops

Coconut Syrup 17.5ml

citric acid .5g

To make the base mix, blend everything above until smooth

Frozen Pina (for 1 serve)

Ice (it’s up to you, depending on how frozen you want it)

Pina Base Mix 80ml

Sammy Piquant Oaxoa 10ml

Coconut syrup 10ml

lime juice and sea salt to rim the glass

Rim the glass with lime juice and sea salt, we like half rims

Place the above ingredients in the blender with the desired amount of ice and blend until the ice is no longer visible. We like our nice and firm consistency between a Granita and a Gelato.

Fire Cracker Base

Jalapeno 1 (optional, cooked over a flame and peeled like a pepper)

Sammy Piquant Oaxoa 350ml

Agave nectar (1:4) 75ml

Orange Bitters 1g

Slice the jalapeno and mix all the ingredients well.

Leave in the fridge to infuse overnight

Fire Cracker makes 1 drink

Lemon Myrtle Salt (from Sammy Picquant)

lime juice 25ml

Orange juice 5ml

Firecracker base 85ml

Ice

Rim a glass with a little lime juice and lemon Myrtle salt

In a cocktail shaker, place the remaining ingredients.

Shake until the can feels cold, then strain into a Glass with fresh Ice

Virgin Raspberry Margarita Base

Raspberry 240g

Lime juice 120ml

Orange juice 120ml

Agave Nectar (1:4) 20ml

Blend the base well

Lime juice 25ml

Ice

Sea Salt

Rim a glass with a little lime juice and Sea salt

Do Virgin Margaritas taste like real margaritas?
At Sonora they do. The smoky agave notes from Sammy Picante’s Oaxaca give our Virgin Margaritas the backbone and balance that soda spritz versions simply can’t match.

Why don’t you serve other mocktails?
Because our guests don’t order them. But Virgin Margaritas? They’re always popular — especially during Dry July and Dry January.
