What to Expect From a Proper Taco

A good taco doesn’t need fireworks. Just a few perfect elements done well.

1. Fresh Tortillas

First thing’s first—the tortilla matters. It’s not just a vehicle. It’s half the flavour. At Sonora, we press our masa tortillas in-house from nixtamalised corn. They’re soft, warm, and smell like the real deal. If your taco comes on something that feels like a supermarket wrap—it’s not it.

2. Traditional Mexican Elements

Whether it’s fish, pork, mushrooms, or something unexpected—a great taco is all about balance. You want savoury richness, acidity, heat, herbs. Even our more modern tacos are built on this traditional Mexican flavour structure. You might find something like our stuffed morel with barramundi and shrimp mole, or a smoked fish with salsa macha and native herbs—but the roots are still there.

3. Salsa—On It or On the Side

A proper Mexican taco bar (like the ones you’d find in Oaxaca or CDMX) always has salsa on hand. In Mexico, it’s often a side buffet—green, red, smoky, bright—you add what suits you. At Sonora, we sometimes build the salsa into the taco, other times we give you a side hit to dial it up your way. Either way, salsa’s not optional—it’s essential.

4. Texture, Always

You don’t want everything mushy. Think crunch from pickles, softness from the tortilla, a little bite from the protein, and a sauce that brings it all together. If it’s one-note, it’s forgettable. If it makes you go quiet and chew for a minute—that’s a good sign.

Best Tacos in Sydney: Our 2025 Edit

The Mexican food scene in Sydney has changed a lot lately. Some OGs have closed. New spots are popping up. But Potts Point and Bayswater Road are still the beating heart of Little Mexico.

We weren’t going to include ourselves on this list… but too many guests said we had to. So here goes:

🥇 1. Sonora – Potts Point

Modern Mexican. Local produce. A garden-to-table philosophy and seriously good margaritas. We do tacos with technique, balance and a bit of imagination—but never without respect for tradition.

Try the stuffed morel taco or the charcoal mushroom with green mole. Or just ask what’s in season.

🌶️ 2. La Farmacia – Darlinghurst

Hidden behind a curtain, this speakeasy-style Mexican bar serves solid traditional tacos, big flavours, and a party vibe. Order the cochinita pibil and get a mezcal on the side.

🔥 3. Carbon – Bondi

Grilled meats, smoky vibes, and blue corn tortillas that show they care about the base. Not overly traditional, but definitely worth a visit—especially for the al pastor.

🌮 4. Rico’s Tacos – Markets & Pop-Ups

This one’s for the birria lovers. Melty, cheesy tacos dunked in consommé—you know the ones. They’re messy and rich and combine all the right elements: tortilla, fat, salsa, texture. We don’t currently serve birria at Sonora—my honest opinion? More of an Instagram moment—but I’d love to be proven wrong.

🌱 5. Bad Hombres – Surry Hills

Plant-based but full of punch. Creative, colourful, and one of the better vegan Mexican restaurants around. Not traditional tacos, but fun and flavour-forward.

Why Bayswater Road Is Still Little Mexico

Potts Point has become Sydney’s low-key Mexican food and cocktail district. From handmade tortillas and mezcal flights to fusion-style seafood tacos and bottomless brunches, this strip punches way above its weight.

At Sonora, we’re proud to be part of it. We use native Australian ingredients, grow what we can in our garden, and build every taco to surprise and satisfy in equal measure. If you’re looking for the best tacos in Sydney or a Mexican restaurant and bar that doesn’t take shortcuts, come see us.
