If you’ve searched for authentic Mexican food in Sydney, you’ve probably seen “barbacoa” that’s just slow-cooked beef cheeks or “Al Pastor” that’s grilled pork on a flat plate.
Let’s be honest — that’s not it. At Sonora in Potts Point, we’re not pretending to be the most authentic Mexican restaurant in Australia. But we’re about to become the only one building two things no one else is doing here:

This isn’t fusion. It’s not theatre. It’s a return to method — and it’s launching right here in Kings Cross.
Barbacoa: The Real Kind. The Pit Kind.
Barbacoa isn’t a stew. It’s not a braise. And it’s not just tender meat with Mexican seasoning.
Barbacoa is a method — an ancient one. Meat (usually lamb) is wrapped in agave leaves, buried or sealed in a pit, and slow-roasted for hours over hardwood coals. The bitter, smoky flavour from the agave is what makes it special — not just tenderness.
We’re not improvising. We’re building a fully insulated firebrick-lined pit, sealed with clay and fueled with Australian hardwood. We’re even sourcing our own agave plants — because if you’re going to do it, you do it right.
No banana leaves. No ovens. No shortcuts. Just smoke, agave, and time.

Al Pastor: It’s Not Grilled Pork. It’s a Lebanese-Mexican Icon.
Al Pastor has a story: it came to Mexico from Lebanese immigrants, inspired by shawarma — but evolved into something uniquely Mexican. Instead of lamb, it became pork, marinated in achiote, pineapple, and dried chiles, then stacked on a trompo — a vertical spit — and slowly cooked beside fire. The outer layer crisps, and it’s carved fresh to serve.
Most versions in Australia? Gas-fired at best. Grilled or stewed at worst.
At Sonora, we’re building Australia’s first charcoal-fired Al Pastor trompo — fired with real coals, carved to order, and served the way it’s done in CDMX.
This isn’t grilled pork tacos. This is tradition, lit on fire and sliced to serve.

Even When You Copy the Recipe — It Comes Out Different
We’ve worked closely with Mexican chefs who’ve said it plainly:
“Even if we use the exact same recipe, the flavour here is different. The land is different. The air. But the method — the respect — that stays the same.”
We’re not trying to recreate a dish down to the last tortilla. We’re respecting the technique, the process, and the culture — and letting the ingredients speak in their own Australian voice.
